For Lizzie and Other Holiday Parties
I don't measure much so I'm guessing on the measurements. Apologies ahead of time!
Here are a couple of my tried and true (almost no-cook/bake) favorites:
"S'mores Bars"
-Box of Golden Graham Cereal (or 3/4 bag of generic brand) **divide out about a cup of the crumbs at the end of the bag and crush to crumbs
-Jar of Marshmallow stuff (easier than marshmallows)
-1/2 stick of butter
-bag of semi-sweet chocolate chips (divide 1/2 & 1/2 of bag)
Prepare cake pan or easy disposable pan (as shown to the left) with butter.
Spray doesn't really work, butter is best. Then put crumbs on bottom of the pan, this makes it easy to lift them out, otherwise it can be gooey (but really yummy!)
Keep everything close at hand because once you turn on the stove it all happens fast!
Melt butter and Marshmallow stuff in a BIG pot on stove at LOW heat. Be careful to not burn it, stir A LOT and DON'T leave it unattended. Should only take a couple minutes.
When it is liquidy, add cereal and stir with big spoon as much as you can. Add chocolate chips here, they will melt as you stir.
Quickly scoop into the prepared buttered pan and press down. I use the bottom of a coffee cup to really compress them down.
Melt remaining chocolate chips. I like the microwave with a little whip cream/cool whip or vegetable oil to thin it out. 1 minute on 70%. Stir. 30 seconds at 50%. Stir. Repeat until runny and hot.
Pour into plastic bag. I put the bag into a cup kinda inside out, so that you can just pour the hot melted chocolate in. Nip the corner of the bag and zig zag over the bars.
Peanut Butter Candy Cookie Bars
-Roll of Premade Chocolate Chip Cookie Dough
-1/2 Bag of Semi-Sweet Chocolate Chips
-A couple bags of M&Ms
-Sprinkles if you like
-1/2 cup crunchy peanut butter
-1 cup powdered sugar
-Couple splashes to tablespoons of Milk
Brake up cookie dough in UNGREASED cake pan. Brake into pieces and press together to form the bottom 'crust' of this unforgettable treat. Sometimes I use my meat tenderizer to push it around or just my fingers to do this. It takes a few minutes to push it all around, as it ends up kinda thin but it rises as it bakes.
Bake 15 minutes, let cool at least 30 minutes.
Beat peanut butter and powdered sugar on low in a bowl. Add milk and sugar to consistency of frosting and to taste. You want it sweet, but peanut buttery. Spread on COOLED cookie crust in same pan. Let sit.
Melt chocolate chips in microwave (or however you like). This is really good with a little (about 2 tbsp) whip cream/cool whip to add texture, but it's not necessary. 1 minute on 70%. Stir. 30 seconds at 50%. Stir. Repeat until runny and hot. Pour onto the creation. Spread CAREFULLY to not stir into the peanut butter spread. The chocolate should be runny enough that you can tilt the pan to help spread it out to the edges.
Sprinkle toppings as you like.
Let set up in the fridge for about an hour before cutting 6x6 bars. Store in fridge. YUM!
